Prawn Soup

Soup is like Duct Tape it fixes everything.
Myself and some amazing foodies,bring you some delicious soup recipes.Perfect for any season.I will be sharing my grandaughter’s favourite soup with you today.I can guarantee you,if you make it,it will become a firm favourite in your home as well.The only difficult part of this recipe is the fish stock,but follow my step by step tomorrow, for the stock recipe.I make a huge batch and freeze it,because l make this soup so often in my home.
Prawn Soup

  • 1 kg small peeled, deveined and washed Prawns (do not butterfly!!!!)
    Use small prawns for the soup!!!
    I cut my prawns in half its easier to eat it in a soup.
  • 125g butter
  • 1/2 cup cake flour
  • 3 cups Seafood stock
  • 2 cups full cream milk
  • 1 tablespoon green chilli garlic masala
  • 1/4 teaspoon crushed green chillies
  • 1 teaspoon crushed garlic
  • 1/2 teaspoon turmeric @kamala
  • 1 1/2 cup fresh cream
  • Chopped fresh Spring
  • Onions
  • Chopped fresh
  • Coriander
  • Ground black pepper and salt to taste
  • Add the prawns into a pot add a pinch of salt and a pinch of red chilli powder steam for 5 minutes with a
  • 3/4 cup water and set aside
  • Melt the butter and add in the,garlic,crushed green chilli,green chilli garlic paste and braise a little add in the flour,braise a little.
  • Add in the milk slowly and whisk really fast
  • Add in the fish stock and whisk to make a thickish bechamel type sauce.
  • Add in the rest of the spices
  • Add in the slightly steamed prawns with the water (don’t discard the water!!)
  • Add in the fresh cream and mix well. lf the soup is too thick, thin down a little with fresh cream.
  • Add in the fresh herbs and let it boil once and turn off the heat.
  • Serve with garlic bread,breadsticks or croutons.
  • When reheating any left over soup,heat in the microwave and add a little milk to thin the soup.
  • This soup will get thick when it stays over,just thin with milk!!!
