  • 1kg leg mutton
    Cut into pieces
  • 2 tablespoons red chilli ginger garlic
  • 1 1/2 tablespoons whole jeera
  • 3/4 cup ghee
  • 1 large onion sliced
  • 2 medium tomatoes liquidized
  • 3 tablespoons tomato pure
  • 3/4 cup full cream plain yogurt
  • 2 teaspoon cumin and coriander powder @kamala.sa
  • 1 teaspoon Kashmiri chilli powder@kamala.sa
  • 1/2 teaspoon turmeric @@kamala.sa
  • 1 1/2 teaspoon gharam masala @kamala.sa
  • 1/2 teaspoon ground black pepper
    Salt to taste
  • 2 tablespoons white vinegar or lemon juice
    Pinch of saffron soaked in a cup of hot water
    Freshly chopped coriander
    Marinade leg mutton pieces in the red chilies ginger garlic masala, overnight.
    Roast the whole cumin seeds, add in the ghee.
    Add in the onions and braise until golden brown.
    Add in the mutton pieces and the saffron water, and vinegar
    Cook for about 15 minutes on low heat.
    Add in all the spices and braise
    Add in the tomatoes and tomatoe puree
    Cook for another 15 minutes.
    Add in the yogurt.
    Cover and simmer untill the meat is soft and tender
    Tip
    (Add more water,as you cooking so a the mutton can become soft and tender simmer on a low heat )
    Garnish with freshly chopped coriander
